Apple Ginger Meringue Cake Recipe

Apple Ginger Meringue Cake Recipe is a great choice for when you want something quick and easy to bake. You can prepare it with or without the Meringue, according to personal taste.


Preparation Time: 30 Minutes for the Cake and 15 Minutes for the Meringue

Bake Time: 1 hour 20 Minutes

Cinnamon Apple with a drop of Rose Water if you have.

Ingredients for the Base:


3 Pink Lady Apples

1 Spoon of Cinemon Powder

1 Spoon of Sugar



Prepare the Base:

Cook the apples until they become medium soft. If you have Rose Water, add a drop towards the end.

Cinnemon Apple Base

When the Apples are ready, you can start mixing the ingredients for the Bottom Part Topping:


25 Grams of Butter

50 Grams of Brown Sugar


Start by melting the butter on low fire and slowly add the sugar. When you have a gluey consustency, spread imediately on the baking paper already palced on the baking tray. Spread evenly and place the cooked apples.


You are now ready to start preparing the Cake mix for this delicious Apple Ginger Meringue Cake Recipe.


Ingredients for the Cake:

225 Grams of Butter

200 Grams of White Sugar

4 Large Eggs

20 Grams of Fresh Ginger (grated)

5 Drops of Vanilla Flavour

220 Grams of Plain Flour

2 1/2 tbs baking powder

100 ml full fat milk (warm)


How to prepare the mix:


  1. Separate the yolks and albumens

  2. Mix the yolks with the sugar

  3. Add the ginger, vanilla flavour, baking powder, melted butter, warm milk and flour and stir until you have a creamy texture.

  4. Using a mixer, create a sturdy foamn for the albumens.

  5. Mix everything together in slow motions and pour over the cinnamon apple.

Once you try this recipe, you will want to do it again.


The evening before I baked 4 apples, so I decided to add them to the Apple Ginger Meringue Cake.


If you wish to add extra baked apples, make sure you start with this process as it will take 30 minutes to bake them on 180 degrese. Remove the seeds and fill up the hole with 1 1/2 sugar and cinnamon.


For this process I used a Zucchini Stainless Steel Corer.










Meringue Ingredients:


3 Albumens

30 Grams of Sugar

Lemon Zest from 2 Lemons


How to prepare the Meringue:


Using a mixer create a sturdy foam for the albumens and slowly add the sugar and lemon zest to the mix.




Remove the cake from the oven after 1 hour of banking. Either you flip over the cake by using an alternative baking tray, or you can simply use 2 plates to flip over before placing back on the tray with the caramelized apples on top.

Add the Meringue Mix evenly on the cake and place the tray back in the oven for another 20 minutes. Make sure the meringue layer is not taller than 2 fingures, otherwise it will not cook enough in 20 minutes and you don't want to overcook the cake.
