Ginger Pineapple Cake

Momapprovedsocial has shared all steps when baking this easy bake recipe for what has become her favorite cake for the Autumn/ Winter season.



Ingredients:


Bottom Part Topping:

25 grams butter

60 grams of brown sugar

1 tin of sliced pineapple


Use Baking Paper and a detachable baking tray, so you can easily detach the bottom at the end.


In a pot, melt on low fire the sugar and butter. It will not melt fully, but it will rather habe a gluey consistency. Spread immediately on the baking paper as it hardens quickly.


Once you have spread the topping, start applying the slices of pineapple and try to cover all surface.


For the cake:


225 grams butter

200 grams of white sugar

4 large eggs

20 grams fresh ginger (grated)

5 drops of vanilla flavor

220 grams of plain flour

2 1/5 tbs baking powder

100 ml full fat milk (warm)


Bake on 170 degrees for 1 hour 20 minutes


Steps to prepare the mixture:

  1. Separate de yolks

  2. Mix the yolks with the sugar.

  3. Add the ginger, vanilla flavor, baking powder and stir until you have a creamy texture.

  4. Using a mixer create a sturdy foam for the albumens.

  5. Melt the butter and add to the yolks mixture with the flour and warm milk.

  6. Mix everything together in slow motions and pour over the pineapple.


When you remove it from the oven, flip it and remove the baking paper.

It is delicious if you serve it warm with ice-cream. It serves 8-9 persons.
